For the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Cocktail (produces 850ml, to serve 10)

150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Cordial: Place the listed ingredients inside a pan, heat until it reaches a gentle boil, agitating to dissolve. Then, remove from the burner allowing it to cool entirely. Pour into a sealable bottle, close it and store chilled, it can be stored for around a month.

To make Cocktail Base: Mix every spirits and syrup into a sizeable container, let it rest for 60 minutes, then pass it through , ideally through cheesecloth, so it's completely strained.

For serving: Measure 85ml from the cocktail base into a cocktail shaker filled with ice, gently stirring carefully for a minute to chill. Filter into a frosted cocktail glass or similar, garnish with the cranberries and complete it using a brief mist of the essential oil over the drink.
